DIY Fortune Cookie Recipe

Make your own fortunes! Fortune cookies are easy to make and you can create interesting fortunes that are sure to wow your dinner guests. While you can whip up the batter in a matter of minutes, the process of cooking your fortune cookies takes time. I could only make two or three at a time because you have to get the fortunes in, squeeze them shut and bend them over the rim of a tea cup in a matter of seconds before they cool and crumble. If you are fortunate enough to have a friend on hand, this process will be super easy and quick.

Ingredients

  • 1 egg white
  • 1/8 tsp. vanilla essence
  • 1/4 cup sugar
  • 1/4 cup flour
  • pinch of salt

Method

Writ out your fortunes, cut them out and have them ready.

Heat the oven to 400 degrees F. Whisk vanilla essence and egg whites until foamy, but not until they are stiff. Fold in the flour and sugar and salt.

Grease a cookie sheet. Drop spoonfuls of the batter onto the cookie sheet and spread it very thin with the back of a spoon. Bake for 2-3 minutes until the edges turn brown. Only bake 2 or 3 of the cookies at a time. Now, ninja fast, use a spatula to get the cookies off the sheet, place a fortune inside and press the edges together. Fold them over the rim of a tea cup and leave to cool.
