They say that the fastest way to a lover’s heart is through their tummy, which may explain the many ancient love spells and rituals that involve cooking. One sure-fire way to lure a loved one was to bake bread naked under the waxing moon. The dough was to be pressed against the body before baking. This Love Spell Rose Cookie recipe is having none of that! Do whisper the name of the person you love as you place the cookies in the oven to ensure success.
3/4 Cup butter
1/2 Cup white sugar
1/4 Cup brown sugar
1 large egg at room temperature
1 Tbsp rosewater
1 tsp vanilla extract
1 1/2 Cups flour
1/2 Cup almond flour
1/2 tsp baking powder
1 tsp cardamom
1/2 tsp nutmeg
1/3 Cup edible dried rose petals (crushed)
1 Cup ground pistachios (divided)
Use a stand mixer with a paddle attachment or a hand mixer to cream the butter, white sugar and brown sugar until lighter in colour (3 minutes). Add the egg and beat until smooth (about 2 minutes). Add the rose water and vanilla extracts and mix until combined.
In a separate bowl, sift the flour and add the almond flour, cardamom, nutmeg, rose petals and 1/3 Cup ground pistachios. Mix until well blended. Slowly add the dry ingredients to your butter mixture and mix until just combined.
Form the cookie dough into a disc. Wrap your cookie dough in plastic wrap and leave in the fridge for 30 minutes.
Grease a cookie sheet and preheat your oven to 350 F (180 C).
Take a spoonful of the cookie dough and roll into a ball. Press into the remaining pistachios to coat and then place it on the cookie sheet.
Bake for 12-14 minutes or until the edges start to brown.
Optional Glaze
Mix 5 Tbsp confectioner’s sugar with 1 tsp rose water and 2 tsp milk to forma stiff glaze. You can dip your cookies in for a sweeter option or pipe a little on the top for decoration.
