Campfire Chocolate Cake Recipe

Happy International Chocolate Cake Day! This is one of my favorite days in the calendar year next to Pizza Day of course. So we decided to celebrate by creating a camping recipe that is going to get you invited on every damn camping trip that any of your friends go on.

What you need:

  • 1 cup and 2 tablespoons flour
  • 1 cups sugar
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 tablespoon vanilla extract
  • 1/3 cup oil
  • 1 teaspoons white vinegar
  • 1 cup cold water

In a Ziploc bag, mix the flour, sugar, cocoa, baking soda and salt before you leave. In a sealable camping bottle, mix the vanilla, oil, vinegar and cold water.

When you are ready to feast, mix the wet and dry ingredients together well. The mixture will be sticky and wet, but that’s ok! Oil four metal camping coffee mugs and fill them 3/4 full of batter.

Make a cooking fire and place the mugs under the grill. Arrange some hot coals around the mugs so that the cakes cook evenly. Place a large camping pot over the top of the mugs to keep heat in and create a little oven. You can tent foil over them too if you don’t want to carry in a large pot.

Bake for 24 minutes or until a knife stuck in the middle comes out clean. Replace coals as needed.

You can frost it with a simple icing made from icing sugar, cocoa and water.

If you are car camping and have a dutch oven, double the recipe for a full-size cake. Bake in dutch oven on the coals and put a few coals on the lid too.
