Meatless Monday Recipe: Beet Chips!

All right, all right, ALL right! Are you ready to snack? Then lettuce turnip the beets. These awesome snacks are delicious, nutritious and super colorful. Best part; they couldn’t be easier to make.

What you need:

  • Beets
  • 1 tsp, of organic olive oil for every 2 medium beets
  • Cookie sheets

Heat oven to 350 F (180 C) and place the racks in the middle of the oven. Peel beets and slice thinly (a mandolin will expedite this process) and place them in a bowl. Pour in olive oil and toss until chips are coated. Lay on two cookie sheets and place them on the racks for 15 minutes, then turn and cook for another 10-15 minutes. When the edges are drying out and the beets are a little lighter in color, remove from the oven and leave to cool. They will crisp once cool.
